Leftovers

Both of us have some difficulty with cooking for 2 people, which generally means we have leftovers. Today I pulled out a chicken and corn soup for lunch. Wow. It was really good. I don’t remember exactly how I made it, though. 

Chicken, onion, carrot, celery, fresh corn, probably home made stock. Maybe some thyme. Really, really tasty and the perfect lunch for a rainy day. 

Having leftovers is awesome. It means even on those horrible days where neither of us can face cooking, we can have a good, homecooked meal. Chili, soup and pasta sauce are all freezer staples for us. Sometimes there will be dough (pizza or tortilla), lasagna or curry in there as well. Organizing the freezer can be a challenge, but I generally manage to label and date things as they go in so can at least make sane decisions about purging when needed. 

Tonight is leftover shepherd’s pie filling topped with puff pastry as we’re out of potatoes. Yum.
