We had friends over for a cookout on Friday. We seriously overshopped for the event. Beer, wine, fruit, and vegetables. What we didn’t over buy was actually meat. A few pounds of chicken and a couple pounds of beef for cooking. Then we bought some duck salami and duck prosciutto from the farmer’s market for nibbling.
Steve made a couple chilled soups. One was a chilled carrot vichyssoise, the other a chilled berry soup. Both were very tasty.
We also made stuffed jalapenos:
18 jalapenos
8 oz cream cheese
2 tablespoons garlic with sun dried tomatoes
Smoked duck
Mix cream cheese and garlic.
Cut the tops off the jalapenos and carefully remove the core.
Stuff cream cheese mixture into the hollow jalapenos. Add a small piece of smoked duck in the top.
Chill in fridge.
Grill until cheese is melty and peppers cooked.
We served berries and fresh sangria, as well.
