Grilled pork chops with cabbage and fresh boiled potatoes.
One of the nice things about living here in CA is there is a plethora of decent, reasonably priced pork around. Last night we picked up some boneless chops from the local market. I seasoned them with a herb rub and some salt and seared them in the cast iron skillet.
As a side with the chops, I did a braised cabbage and leeks.
1 small head savoy cabbage, chopped
3 leeks halved and sliced
herbs (i used thyme)
glug of white wine
glug of chicken stock
salt and pepper to taste
Soften the leeks in the butter until translucent. Add cabbage and cook until they start to wilt, season with salt, add white wine and stock. Cover and braise for 20 minutes. Season with salt, pepper and sherry vinegar. Serve.
Nice accompaniment to the pork chops.
