Brocollini is something we rarely buy but it showed up in this week’s box of veggies. I wasn’t quite sure what to do with it, but a stir fry sounded good. We also had some scallions and mushrooms in the fridge and that sounded like a tasty combination.
.5 pounds brocollini, cleansed and cut inti 2 inch lengths
.5 pounds of crimini mushrooms sliced thickly
3 scallions cut into rounds
1 – 2 teaspoons chili garlic paste
2 – 4 teaspoons oyster sauce
2 teaspoons soy sauce
Mix sauce together in a small prep bowl and set aside.
Heat wok to smoking. Fry brocollini for 2 minutes, then add mushrooms and fry for 4 to 5 minutes. Add sauce mix and stir until combined. Throw in chopped scallions and cook for one more minute. Serve over rice with sesame oil and soy sauce at the table.
A very tasty, filling dinner without meat. These flavors would also work with some thin sliced steak, too. I’d marinate the steak in some soy, mirin and cornstarch for a half hour or so before frying. But I like the way that meat marinade works in stir fry dishes. I may leave out the corn starch as this is a pretty dry stir fry and doesn’t need thickening.
