Work has just exploded for me, with a boat load of new clients with some major problems showing up. This means I’ve not had a huge amount of time to cook recently. Plus, it’s been warm here in the Bay Area (not like the rest of the country for sure, but warm) so dinner has often been salad, a little meat, some cheese and bread.
We did make pizza a couple times this week. We bought pre-made cornmeal crusts, and topped them fairly simply with fresh tomatoes, a little spanish style chorizo, some mozzarella and red onions. I have a feeling the first one had something else on it, but I can’t remember now. I topped with some dried oregano and olive oil before the oven and fresh basil after.
Fresh tomatoes are nice, but can be a bit wet. We tried slicing them very thing and then setting them on paper towels for 20 minutes or so and that resulted in much less liquid on the pizza.
Easy, fast and tasty; doesn’t get any better than that. I’m so glad it’s the weekend, though.
