Atkins’ mission style bean and rice burritos

I fully expect a lot of complaints from people about the carbs in this, but my name is Atkins and well, deal.

I made bean and rice burritos tonight. Mostly this was fridge / cupboard food, but it’s a combination of 2 different recipes I found online.

Lime rice (from Ezra pound cake):

  • 1 cup (ish) cooked rice
  • 2 tbsp (ish) chopped cilantro
  • juice of half a lime (ish)
Mix it all together and let sit.
Salsa
  • 1 roma tomato, chopped
  • 1/4 cup diced red onion
  • 1/2 jalapeno, diced
  • 3 tbsp (ish) minced cilantro
  • salt to taste
  • cumin to taste
Mix it all together, and let sit.
Beans and stuff
  • 1/2 a red onion chopped
  • 1/2 green bell pepper chopped
  • 1 jalapeno, chopped
  • 3 – 4 cloves garlic, minced
  • 1 can black beans, drained but not rinsed
  • cumin to taste
  • salt to taste
Soften onion, garlic and peppers in a little oil. When translucent add beans, cumin and salt. Mash beans and add water to get desired consistency. Add salt and cumin to taste (I’d also suggest some oregano, but I couldn’t find it).
Burrito Assembly
Smear beans onto flour tortilla, add a spoonful of lime-rice and a spoonful of salsa. Add a small crumble of cotija and fold into a burrito. Serve with hot sauce to taste.
These were really yummy and quite filling.  I suspect the rice and bean filling would also be good in enchiladas, which we may try at some point in the future.
