Getting closer to Peking Duck

We had duck leftovers tonight.

I made Szechuan peppercorn pancakes to go with them.

The dough was wet, almost too wet to work with. Next time I’ll cut the water back a bit. I ended up rolling them out with a lot of flour too keep them from sticking. Steve commented they were closer to chapatis than pancakes.

Overall, the great duck experiment was a success. Both meals were very, very tasty. And I still have a carcass, 2 thighs and 2 wings left. I’m thinking broth with most of the bits, with the exception of the thighs, which have enough meat still on them to use for another meal.
